Ingredients (Serves 8)
3/4 pound (3 sticks) butter
3 cups granulated sugar
1/2 pound (1 block) cream cheese
6 large eggs
3 cups cake flour, sifted
1/4 teaspoon salt
2 teaspoons almond extract
1 teaspoon vanilla extract
1: Preheat oven to 325 degrees.
2: Cream the butter, sugar, and cream cheese together until the mixture is light and fluffy.
3: Add salt, vanilla and almond extract. Beat well.
4: Add the eggs one at a time, blending well after each.
5: Slowly stir in the flour. Mix it just enough to incorporate the flour.
6: Spoon the batter into a greased tube pan.
7: Bake for 1 1/2 hours, or until an inserted toothpick comes out clean.
8: Cool for 15-20 minutes, then invert the cake onto a serving dish and remove the tube pan. If you wait too long, the cake will stick to the pan.
