Ingredients (Serves 5)
2 pounds lobster meat, diced
3 russet potatoes, peeled and diced
1 medium onion, diced
3 tablespoons butter
2 tablespoons all-purpose flour
1 tablespoons curry powder
1/4 teaspoon cayenne pepper
1 teaspoon salt
2 cups stock (chicken or vegetable work best)
1: Melt the butter in a saucepan, add the chopped onion and garlic, and fry brown.
2: When the onion is cooked, add the flour and curry powder, stir all together for two minutes.
3: Add the stock and potatoes and cook for 10 more minutes.
4: Add the lobster meat, and simmer five minutes. Serve with rice or naan bread.
