Ingredients (Serves 5)

1 pound lean ground beef
6 ounces (1 can) tomato paste
1 green bell pepper, diced
4 ounces (2, 2 ounce jars) pimientos, drained and diced
1 medium onion, diced
1 envelope enchilada sauce mix
2 cups water
16 ounces (1 package) ziti macaroni, uncooked
Grated parmesan cheese


1: In a large inch skillet over medium-high heat, cook the ground beef, green pepper, and onion, stirring occasionally. Cook until the meat is browned and the pepper and onion are tender.

2: Stir in the water, tomato paste, pimientos, and enchilada sauce mix. Heat to boiling. Reduce heat to low. Cover and simmer 15 minutes.

3: Meanwhile, cook the ziti al dente. Drain.

4: Serve the meat sauce over the ziti and top with parmesan cheese.
